Here is the recipe:

**Ingredients:**

- 1 cup (2 sticks) unsalted butter, softened

- 1 and 1/2 cups granulated sugar

- 2 large eggs

- 2 and 3/4 cups all-purpose flour

- 2 teaspoons cream of tartar

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- For Rolling:

  - 1/4 cup granulated sugar

  - 1 and 1/2 teaspoons ground cinnamon

**Instructions:**

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  1. In a large mixing bowl, cream together the softened butter and 1 and 1/2 cups of granulated sugar until the mixture is light and fluffy.

  1. Add the eggs one at a time, beating well after each addition.

  1. In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, and salt.

  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; you want the dough to come together but not be overworked.

  1. In a small bowl, combine the remaining 1/4 cup of granulated sugar and ground cinnamon for rolling the cookie dough.

  1. Take about a tablespoon of dough and roll it into a ball. Roll the ball in the cinnamon-sugar mixture until it's well coated.

  1. Place the coated dough balls onto the prepared baking sheet, leaving some space between each one.

  1. Use the bottom of a glass to gently flatten each dough ball slightly.

  1. Bake the cookies in the preheated oven for 8 to 10 minutes, or until the edges are set and the centers are still soft. Be careful not to overbake; the cookies will continue to set as they cool.

  1. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

They should be soft, chewy, and filled with the delightful flavors of cinnamon and sugar.
